This actually isn't true. It is leagal to carry it onto the airplane; it just isn't legal to carry it past security. So if you want something to drink on the plane you have two options.
1.) If you're like me and generally don't know the difference between tap and spring water, then you simply bring an empty plastic water bottle past security and then fill it up at the next available drinking fountain.
2.) If you're picky about your water, buy a bottle of water after you've gone through security.
